BodyCrunch Spring Salad with Strawberries and Nuts

“Is it Spring yet?”  That is the question so many of us have been asking this winter.  Well, Spring is almost here and it is the perfect time to enjoy a delicious salad with BodyCrunch Whey Protein Crunchies.

Ingredients

1 box mixed baby greens or baby spinach

1 box fresh strawberries

1 c. nuts of choice, such as pistachios, almonds, walnuts, pecans.  Chop nuts to desired size if too large.

1 c. BodyCrunch

Dressing

1/3 c. cider vinegar

1 c. olive oil

1 tsp. salt

1 tsp. dry mustard

¼ c. sugar or sugar substitute

1 chopped shallot

2 Tbs. poppy seeds

Cracked pepper to taste

Prep

Combine oil, vinegar, sugar, mustard, salt, shallots and poppy seeds in a bowl or container.  Whisk or shake until well blended.  Wash greens and strawberries and dry well.  Slice strawberries into desired size.  Place greens on individual salad plates.  Garnish with strawberries and sprinkle with nuts and BodyCrunch.  Drizzle dressing over top just before serving.  Use cracked pepper as desired.  You can also place all salad greens in a salad bowl and pour the dressing over the top. Toss gently.    Sprinkle with BodyCrunch just before serving.

This salad is also very good with some grilled chicken on the side or over the top. Grilled shrimp would also be tasty.
