For the best vegan protein snack, we’ve whipped up here for you a recipe to get you in a healthy kinda mood thanks to our BodyCrunch Vegan Pea Protein Crunchies. For this recipe, we’ll be using Romaine lettuce mixed with beans and our BodyCrunch Vegan Pea Protein Crunchies.

Ingredients
5-6 leaves Romaine lettuce, washed and torn into pieces
5-6 cherry tomatoes, washed and halved
1-2 small cucumbers peeled and thinly sliced
1 shredded carrot
1-4 small red onion, sliced
Other veggies of choice, for example, snow peas, green beans, shredded red cabbage, asparagus, etc.
1-2 c. kidney beans or beans of choice
1-2 c. shredded low-fat cheddar or feta (optional)
Place all ingredients in salad bowl; toss gently. Drizzle with salad dressing, toss again and serve with crusty bread—or not if you are following a low-carb diet. Perhaps serve with a basic balsamic vinaigrette over the top. Use a healthy extra virgin olive oil, balsamic vinegar, sea salt and cracked pepper, and you are all set.
