These are a tasty and healthy alternative for snacking, Pumped-Up Oatmeal BodyCrunch Cookies. High in protein and fiber, they really satisfy when you just need something to munch on.
1 ½ c. old fashioned oats
¼ c. flax meal
½ c. oat bran
½ t. baking powder
½ t. baking soda
¼ t. sea salt
1 t. cinnamon
½ c. chopped dates or raisins
½ medium zucchini, shredded
1 medium carrot, shredded
1 c. chocolate BodyCrunch, or natural flavor, if preferred
1 egg, beaten
2 T. honey
1/3 c plain fat free Greek yogurt
2 T canola or light olive oil
Set oven to 350 degrees.All Posts
Line cookie sheets with parchment paper.
Combine the dry ingredients in a large bowl, leaving BodyCrunch aside until later.
Shred zucchini and carrots and add to dry ingredients to coat.
Stir in chopped dates.
Combine wet ingredients in a separate bowl and gradually add to dry ingredients, mixing well. Add BodyCrunch and stir to combine. If you use natural flavor BodyCrunch, you can also add 1/4c.chocolate mini-morsels at this time.
Carefully shape into 2 inch balls and place on cookie sheet. Dough will be sticky. Press to flatten with the back of a spoon dipped in flour, if necessary, and bake for 20 to 23 minutes or until lightly browned and set. Use your own judgment for this. Cool for a few minutes before transferring to rack. Dust lightly with powdered sugar before serving for a festive touch.
