Romaine Salad with Beans and BodyCrunch Vegan – Pea Protein Crunchies

Looking for something light to eat, but you know that you need some protein? Look no further! We now have delicious BodyCrunch Vegan – Pea Protein Crunchies. They not only add great taste to a dish, but also add healthy vegan plant-based protein and plenty of Crunch without compromising your dietary needs and preferences.


5-6 leaves Romaine lettuce, washed and torn into pieces

5-6 cherry tomatoes, washed and halved

½ small cucumber peeled and thinly sliced

1 shredded carrot

¼ small red onion, sliced

Other veggies of choice, for example, snow peas, green beans, shredded red cabbage, asparagus, etc.

½ c. kidney beans or beans of choice

½ c. shredded low-fat cheddar or feta, optional

½ cup BodyCrunch Vegan – Pea Protein Crunchies

Place all ingredients in salad bowl, toss gently. Drizzle with salad dressing, toss again and serve with crusty bread, or not if you are following a low carb diet. Wonderful with a basic balsamic vinaigrette over top. Use a good extra virgin olive oil, balsamic vinegar, sea salt and cracked pepper and you are all set.
